What you'll need

  • Pelati (that is whole tomatoes in a can)
  • Tomato paste
  • Chili Pepper
  • Onion
  • Pepper and salt
  • Parsley, mint, whatever herbs you like
  • Eggs
  • SPICES

What you'll do

Easiest recipe ever: brown the finely chopped onion and chili in a non-stick pan for a few minutes. Add tomato paste and whole tomatoes (a can). Note that if you add tomato sauce (salsa) you're messing it up. You need to be adding whole tomatoes (pelati). Break them off with a wooden spoon and lower the heat. Add all the SPICES you like and let it simmer without lid for 7 to 10 minutes until the sauce starts turning thick.

Make some small openings in the tomatoes (it should be thick enough), crack the eggs in the opening. On medium heat, put the lid on and go do something else for 3 to 5 minutes. The egg whites should be nicely cooked, the yellow should still be a bit runny. Grind pepper and sprinkle salt, add the parsley (or herbs), serve!
