What you'll need
- Salmon fillet
- White wine
- Cooking cream or sour cream
- Onion
- A cast iron skillet
- Oil, salt, pepper
What you'll do:
For the sauce: cook the sliced and diced onions until they are nice and brown in some oil. Add some wine and cook through until the alcohol evaporates. Add the cream (sour cream will make your sauce thicker) and cook on low heat until it becomes of your desired consistency (keep stirring or the cream will separate).
For the salmon: put some oil in your cast iron skillet until the skillet and the oil are heated up. In the meantime, season the salmon on both sides with salt and pepper and (if you're a barbarian or bought the cheap cut) other spices.
Put in the skillet with the skin side up, and cook on the lowest possible heat for around 3-4 minutes (you can easily see as it cooks through). Do not move it until ready to flip!!!
Now flip it. Add some butter to the cast iron skillet and spoon it all over your salmon (the skin is now at the bottom). After 3/4 minutes it should be ready - nice and orange with a cool crust and all the flavour from the butter
Put salmon on plate, cover with sauce, serve! The whole recipe takes like 20 mins top. Less than uber eats getting to your place!
