What you'll need
- Piada, Tortilla or Naan bread (they all work)
- Parsley
- Mince meat, or shrimp, or pulled pork, or chicken
- Young cheese (gouda, cheddar)
- Smoked cheese (optional)
- Salty cheese (parmesan)
- Salt, pepper, oil
- Onions or garlic
- Tomato
- Spices
What you'll do:
Sautee the garlic and onion in hot oil for a few minutes until they are soft. Add in some spices if you want, like chilly or paprika, and some lime juice. It's basically pico de gallo but cooked. Now add in the seasoned meat (or seafood) and cook until ready. When you're a couple minutes away from concluding the cooking, add in some finely chopped parsley and any spice you might want
Now, time for assembly. While you get a pan really hot, get some shredded cheese onto half of a tortilla. Place what you just cooked on the cheese bed, and cover with even more shredded cheese! Now, fold the tortilla in half and toast it in the pan until it's as golden as you like it (I do 3 minutes per side). Flip it over (careful not to spill its contents!) and toast the other side. The delicious cheese has melted, and the filling is an explosion of flavour. Enjoy!
