Poached eggs

What you'll need

  • Eggs
  • Good bread (preferably either brioche or whole grain bread) 
  • Salmon
  • Lime
  • Butter and salt

What you'll do

For the 🍞 bread: just toast the bread in a pan using butter and any spices you'd like. You can also make a custard if you want to turn your brioche into french toast. Take out of the pan and put some salmon on top. Nice (but not needed) to keep in the pan or oven to heat until served.

For the 🥚 eggs: boil some water, break the eggs and sieve them (yes, sieve them) to remove some of the white (but not all!), give the water a good swirl and cook the eggs for 3 minutes. The yolk should be runny inside when you take them out.

For the 🇳🇱 hollandaise (this one's hard): easiest, foolproof method: squeeze two limes, and put them in a blender together with a pinch of salt and an egg's yolk or two. Melt some butter (half a stick at least) and add to the blender while still very hot. Blend together - the hot butter will cook the egg without turning it into scrambled eggs as it would on the stove.

Serve: from bottom to top, bread, salmon, poached egg, hollandaise. How do restaurants charge 10 eur for this?
