Coconut Banana Pancakes
What you'll need
- Coconut flour (or any flour)
- Coconut milk (or any milk)
- Banana
- Flaxseed (or oats)
- Eggs
- Vanilla extract
- Cinnamon
- Baking powder
- Baking soda
- (optional) Nutmeg
- Sugar and salt
What you'll do
Mash one big banana with some flaxseed (or ground oats), around 1 tablespoon, and 1/2 cup of coconut milk (or regular milk).
Now mix in 1 sifted cup of coconut flour with 1 tablespoon of vanilla extract, 2 egg yolks, 1 tablespoon of baking powder and 1/2 tablespoons of baking soda. Optionally add 1 or 2 tablespoons of ground cinnamon and a pinch of nutmeg. Add in a pinch of salt and whisk - if it's too thick, add in more milk (or coconut milk)
You can whisk the white of the eggs with sugar separately to make meringue - this will make the pancakes fluffy but also takes quite some times. I didn't do it this time. If you do, fold them in at the end.
Cook in a nonstick pan, around 2-3 minutes per side. Serve with maple syrup and fruit (I also added some greek yoghurt and vanilla on the side).
