Cinnamon buns
What you'll need
- Flour
- Brown sugar
- Eggs
- Salt
- Yeast
- Milk
- Cinnamon spice
What you'll do
For the cinnamon mix: mix a few chunks of butter, 1/2 cup of brown sugar, and a couple tablespoons of cinnamon (depending on your taste) into a hot pan.
For the dough: Take 3 cups flour and pour most of it in a bowl (save some for later). Add 1/4 cup of sugar (preferably brown), a tablespoon of salt and a packet of yeast (couple tablespoons). Mix.
Now, melt 1/2 cup of milk, a bit of water (optional), and a few chunks of nice butter in a pan. When they are hot enough to activate the yeast, pour into the bowl with the other ingredients. Keep mixing the dough (by hand or with a mixer - not a blender!) and add in 1 or 2 eggs.
Keep kneading the dough until it is not sticky anymore, it's firm and springy, with no grains or little pieces falling off from it. Best way to do so is sprinkle the leftover flour onto the dough and knead by hand in the bowl itself. Kneading for around 3 minutes should do the trick if you previously mixed the ingredients together.
Cover the dough and let it rise for at least 1 hour in a calm and warm place! If you don't this recipe turns out like poop, don't ask me how I know.
Now, if the dough has risen, put some flour on your table or counter and spread it (you can use a roller or, in a pinch, a bottle of wine or oil will do). You should spread it until it is about half a cm thick.
Spread the cinnamon mix on the dough using a spoon. Now, roll the dough to make your buns! Finally, cut the rolls in slices of around 2 to 3 cm thick, and put them in an oven dish (casserole).
Break an egg and mix it until the yolk and white are not discernible anymore. Spread it over the rolls with a spoon for some nice glazing!
Bake 20-30 minutes at 190° C (convection) until the buns are nice and brown. Try them immediately! They are super nice when warm.
