Oven cherry tomato chicken
What you need
- Potatoes
- Onion
- Chilli pepper
- Carrot
- Chicken drumsticks or thighs
- Oil or butter
- Salt, pepper, cayenne pepper
- Lemon
- Cherry tomatoes
What you'll do
Dice the onions and cook them in oil with the chilli pepper for some very nice flavoured oil. Sieve the oil and put it in a bowl with salt, pepper, other spices (if you want) as well as a teaspoon of baking soda.
Peel and cut the potatoes in pieces, toss them in the bowl until evenly coated. Place them in the oven dish. Do the same for the chicken drumsticks, after patting them dry (DO NOT wash them as that is dangerous). Put them in the oven dish too.
Grate some lemon zest on the oven dish, and bake chicken and potatoes 30-40 minutes at 200 degrees, flipping the chicken once. Slice the carrots, oil them and put them in the dish too. Bake for 20 minutes more. Finally, add the cherry tomatoes after dipping them in oil or butter, and bake for 15 minutes more.
Serve!
